Lake Fish Bottarga

Bottarga is an excellent product obtained from salted and dried fish eggs. This specialty is commonly associated with mullet or tuna roe; less common, or rather very rare, is that obtained from freshwater fish. Here is a rare example of 100% minced lake fish botargo, fragrant with a sweet flavor.
